Conversations are encrypted at rest under per-owner keys, which is a meaningful protection and still not the same guarantee as the data never leaving your house.

Cards import and export in the standard portable format, so trying this and going back to a local setup costs an export. That is deliberate. A service that is hard to leave is a service that has stopped competing on being good.
